White Chocolate Macadamia Nut Cookies

I've spent that last couple of weeks editing photos that I took as far back as October! These cookies were supposed to be posted on my blog early in November but I just never got to them.

After years of making chocolate chip cookies, I got bored and began to experiment with different combinations of chips and nuts. Some have been more successful than others, but these were a definite hit!

I really love home baked cookies and try to make sure that I always have fresh cookies on hand. These are adapted from Nestle's Toll House Cookie recipe (the one on the back of the chocolate chip package) so they're quick and easy to make too!


White Chocolate Macadamia Nut Cookies ... adapted from Nestle Toll House Chocolate Chip Cookie recipe

2 1/4 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
1 cup butter, softened
3/4 cup granulated sugar
3/4 cup packed brown sugar
1 teaspoon vanilla extract
2 large eggs
2 cups white chocolate chips
1 cup chopped macadamia nuts

Preheat oven to 375 degrees F.  In a small bowl, combine flour, baking soda and salt.  In a large bowl, beat butter, granulated sugar, brown sugar and vanilla extract until creamy. Add eggs one at a time, beating well after each addition. Gradually beat in flour mixture. Stir in white chocolate chips and nuts. Drop by rounded tablespoon onto ungreased baking sheets. 

Bake for 9 to 11 minutes or until golden brown. Cool on baking sheets for 2 minutes then remove to wire racks to cool completely.

  4. Oh you're killing me! They look so beautiful. Perhaps just gazing upon them would cure my need to actually try them. I don't have macadamia nuts, thank goodness. My resolve is nearly gone!

  6. Oh Lynda, Your photo's are beautiful as always. I have to take a course soon as I'm getting no where fast. Learning to edit photo's is so hard.
    But for me learning to bake cookies could be just as hard LOL! these look so yummy...Butch has packaged turnovers in the oven now..great for us on a snowy day...Yum!

  7. Bought a tub from a school kid before Christmas ..
    had every intention of preparing them for holiday giving..
    ran out of time and effort..
    but..
    after New Years inspiration struck!
    opened the tub..
    to discover 40 little balls of cookie dough..
    popped them onto baking sheets..
    the aroma was tantalizing..
    the taste was even more exquisite than imagined...
    ummmmmmm!!!
    sent a dozen to work with Hubs..
    and then set about nibbling..
    and nibbling..
    sent the remainder home with daughter for the grands..
    these cookies are the best ever!!
    cannot settle for just one, or one in each fist..
    so now I shall savor your beautiful photos..
    as I remember those delicious cookies..
    bite after bite!!

  8. Carissima Lynda....after I tried a liitle time ago your miraculous zucchini bred; which is for me and my three men the BEST IN THE WHOLE WIDE WORLD,...I definetely will try these delicate & crispy looking wonderful bisquits.......!!!!
